Kerala Sadhya

Sadhya is a feast of Kerala and is of much importance to all Malayalis around the world. Sadhya, in Malayalam means ‘banquet’ is a sensational multi-course vegetarian meal that features over 24 dishes on a banana leaf. Consisting of a variety of traditional vegetarian dishes is usually served on a banana leaf as lunch. Sadhya is enjoyed without any cutlery and is usually eaten while sitting on the floor.

Upperi/Snacks

A typical sadhya has banana chips, thick jaggery-coated banana chips popularly known as ‘sharkara varatti’ in Malayalam, pappadam and pazham (banana) on the extreme left corner of the banana leaf.

Pickles

Pickle making is an ancient tradition in India which has been loved and followed by or mothers and grandmothers. The Western world regards it as the art of preservation or fermentation but for us it is a creation of a unique accompaniment that goes with every meal. We all have grown up eating delicious, crunchy and tangy pickles. No meal is complete without them. It is a method of developing the flavors and letting them mature.

Thoran

A staple in every malayali household, thoran can be made from any vegetable. Usually, it’s cabbage and carrots or just beans with grated coconut. Requires minimal cooking time and a perfect healthy dish. 

Pachadi

A delicious yogurt-based curry made with either pineapple beetroot or bitter gourd and, of course, grated coconut.

Kichadi

Spicy yogurt with your choice of vegetable. It can be okra, cucumber or even bitter gourd. Add it to your rice and parippu, and see how you lick your fingers in the end.

Avial  

Mixed vegetables with grated coconut and made in coconut oil. This is one tasty mixed vegetable dish you’ll ever have. 

Olan

Ash gourd and red beans splashed with a generous amount of hand-pressed, authentic coconut milk. 

Erissery

A yummy dish made with pumpkin, red beans and a generous amount of grated coconut.

Kootu curry

Kootu Curry is a thick curry made with vegetables and Legumes.  It is a yellow curry featuring one or two vegetables such as banana and coconut, and has a hot and sweet taste. 

Madhura curry

Madhura Curry is a dish which is a must on special occasions. It is so easy to prepare and require only minimal ingredients. This curry have sweet and sour taste which is unique about this dish. It tastes best with rice.

Parippu curry

Plain old moong dal topped with red chilies, black sesame seeds. Top it with ghee and you’ll be having a gastronomical heaven in your mouth. 

Sambar

An essential dish of the Sadhya, Sambar is cooked with every vegetable there is from beans to potatoes to yam. Everything goes into making this wonderful dish!

Moru kachiyathu / Moru curry

Mor curry often called Mor Kuzhambu or Pulissery is a savoury side dish made of buttermilk and served with rice and dry spicy vegetable dish. 

Kalan

A typical Keralite delicacy with a yogurt based gravy, this sour cream curry is made with yams, plantains, coconut and curd.

Rasam

This ultimate comfort food is an essential part of the Sadhya. Made with tamarind, tomatoes, pepper and lentils, this South Indian variation of soup is mixed with red rice and enjoyed with a dry vegetable preparation.

Paal Payasam

Paal Payasam is purely divine. The mild pink hue from the slow cooked red rice and the minimal garnish makes it the perfect ending to an amazing spread.

Palada Payasam

One of the most popular payasam in Kerala is the Palada payasam. It might appear like a simple dessert to craft but requires oodles of passion and discipline in equal measure. This is not a dish that involves assembling multiple ingredients and finding the balance but just comprises three essential ingredients – milk, sugar and ada or rice flakes.
